Having a little guy with gluten sensitivities is tough…especially since he seems a lot more sensitive than I am. It makes me so grateful that there are lots of options available for easy dishes. Not only am I able to modify most of my recipes to make them gluten-free, but I was able to bake a quick batch of chocolate chip cookies and we watched a movie. The house smelled great, we had lots of laughs and a sweet treat that everyone could enjoy.
It’s one thing to have restrictions when it comes to food…and I have a lot…but when your 10-year-old has them it’s another. He has handled it very well…and not having tummy aches is a good motivator. But I am so thankful that he can still have cookies and and pizza and peanut butter sandwiches and a grilled cheese and spaghetti. All the things he loved before we have been able to modify and as his mama that makes me happy. I am also thankful that I’ve been on this path for a quite a while now so that I can tell him I understand how he feels.
